6-8oz of Southern Breeze Breader (All Purpose, Chicken or Seafood)
3 eggs
Instructions
Prep chicken by rinsing under cold water and trim fat and cartilage with knife or shears.
Cook 1 Cup Rice middlins in 2 cups water (Bring water and middlins to boil, then lower heat, cover and allow to simmer for 15 minutes.)
Prepare oil by coating a pan and allowing oil to reach 350° (If you don’t have a thermometer you can wet your finger and shake a small drop of oil over pan, if oil pops, you’re ready to fry.)
Bring cooked middlins (water should be absorbed) over to counter top, fluff, and place in a cool fresh bowl.
Add 6 - 8 oz of Southern Breeze breader to separate bowl.
Add Middlins to breader and mix thoroughly (Add as much or as little Middlins to achieve desired texture.)
Whisk 3 eggs in separate bowl.
With a fork, dredge your chicken through the egg, then your Middlins and Breader mixture, being sure to evenly coat both sides.
Lift your coated chicken tenders gently into the oil and let cook between 3 and 4 mins per side until golden brown.
Prepare your favorite dipping sauce and enjoy! If you’re feeling spicy, add buffalo sauce to a large bowl and stir in your cooked chicken tenders for an added kick of spicy flavor!
